This mushroom salad bursting with flavour and spice is perfect to pair with a warm bowl of soup or great when spooned over plain rice, for a meatless lunch side dish option.
1 packet mushrooms 1 onion, sliced 2 spring onions, chopped 1 tablespoon minced ginger ¼ cup fresh mint leaves 4 tablespoons chopped coriander 1 teaspoon soy sauce 1 teaspoon sugar Juice of 1 lemon 2 teaspoons red chilli flakes 1 teaspoon crushed black pepper 1 tablespoon butter Salt, to taste
Saute the mushrooms in butter until they cook completely. Season them with a bit of salt in the end.
Mix together the cooked mushrooms with both types of onions and fresh herbs.
Combine the remaining ingredients and season with a pinch of salt.
Pour the dressing over the mushroom mixture and toss well. Serve immediately.
