Packed with the warm flavours of cinnamon, bay leaf and peppercorns, this creamy and delicious soup is perfect for winter. Here is an easy recipe to make pumpkin soup at home.

1 kg pumpkin diced 4 tbsp butter 3 bay leaves 15-20 black peppercorns 3 onions sliced Salt to taste 1 tsp white pepper powder 1 tsp lemon juice ½ cup fresh cream 2 tbsp garam masala 1 tsp chilli flakes 2 tsp ground cumin 4 garlic cloves

Add butter to a pressure cooker and let it melt. Then add bay leaves, garlic and black peppercorns.

Then add chopped onions, garam masala, pepper powder and sauté for a couple of minutes.

Now add pumpkin cubes and sauté for half a minute. Pour four cups water and pressure cook until one whistle. Strain the stock and put it aside.

Puree the cooked pumpkin and add the stock with one cup of water. Serve hot in a bowl with fresh cream, chilli flakes and lemon juice.
