Want to give your immune system a good boost during the season change brought on by autumn? This spiced carrot soup is just what your health and taste buds need.
2 cups carrots, chopped ½ cup onion, chopped 2-3 garlic cloves 1 tsp ginger, chopped ¼ tsp nutmeg ¼ tsp cinnamon 1 tbsp olive oil ¼ cup orange juice ¼ tsp turmeric powder 1.5 cups vegetable broth Salt, to taste Black pepper, to taste

Heat oil in a pot and add the garlic, ginger, nutmeg, cinnamon, carrots and onions.
Mix well and saute for 10 minutes or until the carrots start turning soft.

Add the orange juice, salt and pepper, and cook for another 10 minutes, then switch off the flame.
Once cool, place the carrot mixture in a blender and turn into a smooth puree.

Place the puree back in the pot, add the broth, mix well and cook for another 10 minutes.

Serve the Spiced Carrot Soup hot with fresh croutons.
