An easy lightened-up Mexican street corn salad that can be made with fresh or frozen corn. This salad is creamy, delicious and perfect for a light dinner. Here is how to make Mexican street-style corn salad:
2 cups fresh corn 1 tbsp butter ½ cup hung curd 1 tbsp mayo Lemon juice Grated cheese 2 tsp chilli powder 2 tsp chilli flakes Salt to taste Pepper to taste green bell peppers Tomatoes Jalapeños or dhobli mirch White Spring onion Greens Spring onion Green chillies Coriander
Sauté corn in some butter or ghee if you want, until completely charred.
Add in hung curd, mayo, cheese, chilli powder, chilli flakes, salt and pepper, lemon to charred corn and mix well.
Add chopped bell peppers, tomatoes, jalapeños, chillies, onion, spring onion, and coriander to the corn mixture.
Give a good stir. Serve with squeezed lime juice and garnish with spring onion
