A personification of tropical flavours in a glass, this cocktail laced with coconut rum is a great way to let your hair down on a stuffy summer evening. Beat the heat and get into high spirits for the weekend, with this easy-to-recreate recipe.
60 ml pineapple juice 45 ml coconut rum 60 ml grapefruit juice Lime wedge, for garnish
Add the juices and rum to a shaker filled with ice and mix vigorously till the outer walls begin to feel frosty.
Strain and pour into a serving glass, garnish with a wedge of lime and serve immediately.
