There's a notion that there are not many high-quality vegetarian protein sources but that's not true. This simple paratha recipe that features soya and paneer is the perfect way to kickstart your day. It is rich in protein and comes together fairly quickly.
1 cup soya flour 1 cup whole wheat flour 1/2 cup grated paneer 1 small onion, finely chopped 2 green chillies, finely chopped Spices: 1/4 tsp turmeric, 1/2 tsp cumin powder, 1/2 tsp coriander powder, salt to taste Fresh coriander leaves, chopped Ghee or oil for cooking
Combine soya flour, whole wheat flour, grated paneer, spices, and chopped onions, chillies, and coriander leaves to make a dough.
Knead the dough and let it rest for 15-20 minutes. Divide the dough into balls and roll them into flat rounds (parathas).
Preheat a griddle or non-stick pan. Cook parathas on the griddle with ghee or oil until golden brown and crispy on both sides.
Remove from heat and serve hot with yoghurt or pickles.
