2 cups leftover rice 1 cup soya chunks ½ cup chopped carrot ½ cup chopped beans ½ cup chopped capsicum ½ tsp chopped garlic ½ tsp chopper ginger 1 tsp chopped green chilies 2 tbsp oil 2 tbsp Salt A pinch of Sugar Little vinegar
Soak soya chunks in water for 30 mins. Then, in a pan, add water and soaked chunks. Let it boil.
When done, squeeze out the extra water from chunks and run them under cold water. Keep them aside.
Heat a pan and add water. Add the chopped veggies to it and let them blanch.
Heat oil in a pan and add chopped garlic. Stir well and add chopped ginger.
Add the blanched veggies and cook them for some time. Then, add the leftover rice.
Add salt, vinegar and pinch of sugar. Give the rice a good mix and check if the veggies are cooked.
When done, serve and enjoy!
