South Indian usal is a wholesome and comforting dish made with sprouted lentils or beans. The nutritious Maharashtrian staple can be enjoyed as is or paired with roti, pav, or bhakri.
1 cup mixed sprouts (moong, chana, and matki) 1 onion 2-3 green chillies 1-inch ginger 3-4 cloves garlic 1 tsp cumin seeds 1 tsp mustard seeds 1 dried red chilli A pinch of hing 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1/2 tsp garam masala 1 tbsp oil Coriander leaves for garnish Salt to taste
Rinse and soak the mixed sprouts overnight. Once sprouted, rinse again.
Heat some oil and saute cumin seeds, mustard seeds, and dried red chilli.
Add chopped onions, green chillies, ginger, and garlic and saute till golden brown.
Mix in turmeric powder, red chilli powder, coriander powder, and garam masala.
Add the sprouts and coat them well with the masala. Pour some water and boil.
Simmer till you get a thick gravy, garnish with coriander leaves and enjoy.
