Upma is a light and healthy breakfast choice to start your day. The South Indian delicacy is traditionally made with suji, chopped veggies, and dry fruits and nuts. Here’s a quick recipe.
1 cup suji 3 cups water 1/2 tablespoon ghee 1/2 teaspoon mustard seeds 1 teaspoon urad dal 1 teaspoon chana dal 10-12 cashew nuts 1 onion 1 green chilli 1 teaspoon grated ginger 8-10 curry leaves Salt to taste Chopped coriander leaves for garnishing
Dry roast the suji for about three to four minutes and set it aside.
Take some ghee and cook mustard seeds till they splutter. Add urad dal and chana dal and fry till golden brown.
Add chopped cashew nuts, curry leaves, green chilli, and grated ginger and saute.
Mix in chopped onions and cook till soft. Add water and salt and let it boil.
Turn the heat to low and keep stirring till the suji absorbs most of the water.
Once the upma is of the desired consistency, garnish with chopped coriander leaves and serve hot.
