Tadka idli is a delightful twist on the South Indian dish that combines the traditional idli and the aromatic tadka (tempering) that elevates the taste to a new height. The recipe brings together the softness of idli with the rich flavours of spices, creating a culinary experience that is both comforting and exciting.
2 cups Idli batter 1 tsp Mustard seeds 1 tsp Cumin seeds 1 tsp Urad dal 1 tsp Chana dal 8-10 Curry leaves 2 finely chopped Green chillies 1 inch Ginger, finely chopped A pinch of Asafoetida (hing) ¼ tsp Turmeric powder Salt: to taste 2 tbsp Oil Fresh coriander leaves for garnish
Heat oil in a pan on medium heat. Add mustard seeds and let them splutter. Add cumin seeds, urad dal, and chana dal. Sauté until dals turn golden brown.

Pour this tadka over the idli batter and mix gently. Add salt to taste and combine thoroughly.
Grease the idli molds and pour the batter into them. Steam the idlis for 10-12 minutes or until done.
Once done, remove from the molds and garnish with fresh coriander leaves. Serve hot with coconut chutney or sambar for a delicious meal.
