Curd Rice also known as Thayir Sadam in South India, is a dish made with cooked rice and yoghurt, tempered with spices. It is a comforting and cooling dish, often served as part of a traditional South Indian meal or enjoyed on its own.
1 cup rice 2 cups water 1 cup plain yoghurt 1 tbsp oil 1 tbsp mustard seeds 1 tsp urad dal 1 tsp chana dal 1-2 dried red chillies 1-2 green chillies
1 tsp grated ginger A pinch of asafoetida (hing) Curry leaves 1 tbsp coriander leaves 2 tbsp pomegranate seeds
In a pot, add rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat, cover, and simmer until the rice is cooked. Let it cool slightly.
In a bowl, mash the cooked rice slightly with the back of a spoon. Add the yoghurt, salt and mix.
Heat the oil in a small pan. Add the mustard seeds, urad dal and chana dal, dried red chilies, green chilies, grated ginger, asafoetida, and curry leaves. Sauté for a few seconds.
Pour the tempering mixture over the prepared curd rice.
Add the finely chopped coriander leaves and garnish with pomegranate seeds.
