Medu Vada is a quintessential South Indian snack that is a perfect combination of crispy exterior and soft interior, making it favourite among all food enthusiasts. This dish is commonly consumed in breakfast but can also be enjoyed as snack. Take a look at the recipe here.
2 cups of urad dal (black gram), soaked for 4-6 hours 2-3 green chillies 1 inch ginger A sprig of curry leaves, finely chopped Salt to taste A pinch of asafoetida (hing) Black pepper for seasoning Oil for deep frying
Grind the soaked urad dal into a smooth batter, adding minimal water. Mix in chopped green chillies, ginger, curry leaves, salt, asafoetida, and black pepper to the batter.
Heat oil in a deep frying pan.
Wet your hands, take a small portion of batter, and shape it into a flat, round disc with a hole in the center, resembling a donut.
Carefully slide the shaped vadas into the hot oil and fry until golden brown and crispy on both sides.
Serve hot with coconut chutney or sambar.
