South Indian Maddur Vada For A Crispy Monsoon Munchie

Munching crispy and savoury snacks on a typical rainy day is extremely satisfying. If you have already tried enough pakoras, try this South Indian maddur vada recipe for a crunchy evening snack.

Ingredients

1 cup rice flour 1/2 cup rava (semolina) 1/4 cup all-purpose flour 1 onion 1 green chilli A handful of coriander leaves 1 tablespoon sesame seeds 1 tablespoon roasted peanuts 1 teaspoon cumin seeds A pinch of asafoetida (hing) Salt to taste 2 tablespoons hot oil Water for kneading

Step 1

Mix rice flour, rava, all-purpose flour, sesame seeds, peanuts, cumin seeds, hing, and salt.

Step 2

Stir in the finely chopped onion, green chilli, and coriander leaves.

Step 3

Heat some oil and pour over the dry mixture. Add water and knead a dough.

Step 4

Take small portions of the dough and shape into patties. Deep-fry or air-fry till crispy.

Step 5

Arrange the crispy Maddur vadas and serve with your favourite chutney.
