Kanchipuram idli is a flavourful variant of South Indian delight. The batter is spiced which makes the fluffy rice cakes taste better. Here is a quick recipe for you to try.
2 teaspoons black pepper ¾ cup idli rice 1 teaspoon roasted cumin seeds ½ cup urad dal 1 tablespoon ghee ¼ cup raw rice 1 tablespoon ghee ½ teaspoon dry ginger powder Salt to taste
Wash and soak rice and urad dal for at least 6-8 hours before blending them into a coarse paste.
Add salt to taste and allow the batter to ferment for at least 7-8 hours.
Add black pepper powder, roasted cumin powder, and dry ginger powder before you are ready to make idli.
Add some sesame oil or ghee to the batter. It will help to make the softest rice cakes.
Grease the steel bowls, coconut shells, or makeshift idli bowls with oil. Pour batter into them.
After steaming for 15-20 minutes, serve Kanchipuram idli with sambar and chutney.
