South Indian Elaneer Payasam For Your Summer Sweet Tooth

Also known as tender coconut kheer, Elaneer payasam is a refreshing and delicious South Indian dessert. It is perfect to cool you off on hot summer days. The dessert is made from delicious tender coconut pulp, coconut milk, and whole milk which is sweetened with sugar and condensed milk. It is served chilled and is a popular dessert on festive occasions.  

Ingredients

2 tender coconuts (elaneer) 1 cup coconut milk 1 cup whole milk 1/2 cup condensed milk 1/4 cup sugar (adjust to taste) A few saffron strands (optional) 1/4 teaspoon cardamom powder Chopped nuts (almonds, cashews) for garnish 

Step 1

Scoop out the tender coconut pulp and set aside. Reserve the coconut water.

Step 2

In a blender, combine the tender coconut pulp and coconut water. Blend until smooth and set aside. 

Step 3

In a thick-bottomed pan, bring the whole milk to a boil. Lower the heat and let it simmer for about 10 minutes until it slightly thickens.

Step 4

Stir in the condensed milk and sugar. Continue to simmer for another 5 minutes. Add the coconut milk to the pan and mix well. Pour in the blended tender coconut mixture.

Step 5

Add saffron strands (if using) and cardamom powder. Stir and cook for another 2-3 minutes. Do not boil after adding the coconut mixture to preserve its fresh flavour. 

Step 6

Remove from heat and let the payasam cool. Refrigerate for at least an hour. Before serving, garnish with chopped nuts.
