There are many bottle gourd-based dishes that you must have tried, but have you ever tasted chutney made with it? In Andhra Pradesh, the vegetable is used to make tangy pachadi that you can serve with a variety of dishes. Here is the recipe.
2 tsp urad and chana dal 2 cups bottle gourd 2 tsp sesame seeds 3-4 garlic cloves 1 tsp tamarind paste 2 dry red chillies ½ tsp cumin seeds ¾ cups tomatoes ⅛ tsp turmeric powder ¼ tsp mustard seeds A pinch of hing 3 slit green chillies 1 sprig of curry leaves 2 tsp oil
Wash and chop bottle gourd and keep it aside. In a pan, roast chana dal, urad dal, dry red chillies, and sesame seeds.
Heat oil in the same pan and saute garlic and green chillies. Remove them on a plate.
In the same pan, cook bottle gourd, tomatoes, and turmeric. Saute for 3-4 minutes and turn off the flame.
Once the ingredients cool off, blend them into a coarse paste and pour them into a bowl.
After pouring tempering over pachadi, serve it with dosa, idli, vada, and other delicacies.
