Deep-fried, crispy and chewy fugias are similar in composition to yet another tea time delicacy – the goli bajje. An East Indian staple bread made with a yeast-based dough, these mildly sweet fugias can be paired with spicy curries or enjoyed on its own, with a sprinkling of dry garlic chutney.

500 grams all-purpose flour 2 tablespoons rice flour ½ tablespoon dry yeast ½ cup coconut milk 2 eggs 2 teaspoons sugar 1 pinch salt Oil, for deep-frying

Combine the flours, sugar and salt in a large bowl and set aside.

Pour the wet mixture into the dry and knead into a dough for exactly 3 minutes.

Cover the loose, sticky dough with a damp cloth and rest for a minimum of 4 hours or overnight.

Heat the oil in a large frying pan while you divide the dough into small portions to shape them into balls.

Gently drop a few into the hot oil and fry for 3-4 minutes, until golden-brown and fluffy. Serve hot.
