Inspired by a South American dish Llapingachos from Ecuador, this simple snack is crispy on the outside, soft on the centre and cheesy all the way through. What more could you need?
6-8 medium potatoes 1 tbsp cornflour Grated cheese Paprika (optional) Salt and pepper to taste
Peel the potatoes and steam or boil until fork tender. Add salt and pepper to taste then mash until smooth.
Grate the cheese and mix it with the potato. Add some cornflour if the mixture becomes too wet.
Form the mixture into balls and flatten them. Fry in hot oil until golden on both sides.
