Nippattu is crispy Karnataka-style crackers made with rice flour, maida, besan, and spices. A popular tea-time snack, here's how to make it at home.
2 cup rice flour ¼ cup maida, besan, grated coconut, and roasted peanuts ½ tsp cumin seeds, carom seeds, and red chilli powder 2 tsp whole chana dal 8-10 curry leaves, chopped 1 tsp salt 2 cup oil
In a dry spice grinder, add the roasted peanuts and grind them to a fine powder. Add it to a mixing bowl along with the rice flour, maida, besan, salt, and red chilli powder and mix well.
Add the chopped curry leaves, grated coconut, chana dal, cumin, and carom seeds and incorporate them with the mixture.
In a kadhai, add the oil and put it on medium heat. Add 2 tbsp of the hot oil to the flour mixture and mix it in with a spoon. Gradually add water to the flour mixture and knead it to make a stiff dough.
Make plum-sized dough balls on a greased surface, and roll them out into small rounds. Pierce it with a fork so it doesn’t bubble up in the hot oil.
Add the rolled-out dough in batches, into the hot oil and fry them till crisp and browned on the outside, and serve warm.
