Indulge in the delightful flavours of Brazil with Curau de Milho. Made with creamy coconut milk and fresh sweetcorn, it's a luscious and satisfying dessert that captures the essence of Brazilian cuisine.
2 cups of fresh or frozen sweetcorn 1 cup of coconut milk ½ cup of sugar ½ cup of cornstarch 1 teaspoon of vanilla extract Cinnamon (for garnish)
In a blender, combine sweetcorn, coconut milk, sugar, and cornstarch. Blend until smooth and creamy.
Pour the mixture into a saucepan and cook over medium heat, stirring constantly, until it thickens (about 10 minutes).
Remove from heat and stir in 1 teaspoon of vanilla extract.
Pour the pudding into individual serving dishes or a large dish.
Let it cool for a few minutes, then refrigerate for at least 2 hours to set. Sprinkle with cinnamon powder before serving.
