Baingan Bharta is a smoky and delicious North Indian dish made with roasted eggplant, mashed and cooked with spices. It is a comfort food that goes well with roti, naan or rice and is a common dish in Indian homes.
2 baingans (eggplants) 2 tbsp oil 1 big onion 2 tomatoes 2 green chillies 1 tsp cumin seeds 1 tsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala Salt to taste Fresh coriander leaves
Wash the eggplants and prick them with a fork. Roast them directly over an open flame until the skin is charred and the eggplant is soft.
Let it cool, then peel off the skin and mash the flesh. In a pan, heat oil. Add cumin seeds and let them splutter.
Add onions and sauté until golden brown. Add the ginger-garlic paste and green chillies and let it cook.
Add the tomatoes, turmeric powder, red chili powder and salt. Cook until the tomatoes are soft and release oil.
Add the mashed eggplant and cook for 5-7 minutes until the flavours blend. Add garam masala and cook for another 2 minutes.
Garnish with fresh coriander leaves and serve hot with roti or rice.
