If you are looking for a summer cocktail, then give this drink a try. Pineapple coconut fizz might become your new favourite.
4 cups peeled, cored, and cubed fresh pineapple 1 litre coconut-flavoured seltzer water 1 cup white rum Garnish: pineapple leaves and pineapple wedges
Process cubed pineapple in a blender for 2 to 3 minutes. Pour into a 2- to 3-quart pitcher, and stir in coconut-flavoured seltzer water and white rum.
Fill 8 glasses with crushed ice, and add 2 pineapple leaves to each glass. Pour cocktail evenly into glasses. Garnish with pineapple wedges.
