This tangy and spicy recipe packed with flavour, is one of the most delicious ways to use up leftover rotis, and can be recreated with leftover bread as well, for a warm snack to enjoy.
4 leftover rotis 1 onion, finely chopped 2 tomatoes, chopped 4 green chillies, chopped 6-7 curry leaves 1 teaspoon mustard seeds 2 tablespoons crushed garlic 1 tablespoon coriander powder 1 teaspoon turmeric powder 1 teaspoon red chilli powder 2 tablespoons vegetable oil Salt, to taste 1 + ¼ cup water
Tear the leftover rotis into tiny pieces and set aside.
Heat the oil in a pan and add mustard seeds to splutter.
Sauté the crushed garlic and onions for 4-5 minutes.
Add the green chillies, curry leaves and fry for a minute, before tipping in the tomatoes.
Cook the tomatoes with a lid on until they turn completely mushy and cook down slightly.
Once the mush thickens, season with the spice powders and salt.
Now pour a cup of water and bring it to a simmer before adding the torn roti pieces.
Continue to stir until the rotis begin to absorb all the flavour mixture and thicken into a semi-solid consistency.
If it becomes too thick, add the remaining water and adjust consistency.
Rest for a couple of minutes, before garnishing with lots of chopped coriander and serving hot.
