Paneer do pyaza is a popular Indian curry that is known for its rich, creamy curry loaded with soft, succulent paneer cubes cooked in plenty of onions along with the common Indian spices.

100 g paneer 2 large onions 1 chopped green chilli 1 teaspoon kasuri methi 3 medium tomatoes 1/2 teaspoon grated ginger 2-3 crushed cloves of garlic 1/2 teaspoon cumin seeds 1 green cardamom 1 small piece of bay leaf

1/8 teaspoon turmeric powder 1/2 teaspoon red chilli powder 1 teaspoon of coriander powder 1/2 teaspoon garam masala 1 tablespoon plus 2 tablespoons of oil 1 tablespoon of fresh cream 1 tablespoon of finely chopped coriander leaves Salt to taste 1/2 teaspoon sugar (optional)

Fry the paneer cubes till they are golden brown, then put them aside. Saute bay leaf, green cardamom, and cumin seeds in a pan.

Cook the thinly sliced onions until they turn golden brown. Add the diced tomatoes, green chilli, grated ginger, and smashed garlic, and cook till tender.

Toss in the turmeric powder, red chilli powder, coriander powder, garam masala, kasuri methi, salt, and optional sugar, and cook for a few minutes.

Fold in the fried paneer cubes into the masala mixture. Add the chopped coriander leaves and the freshly creamed mixture. Serve hot over rice or with naan or roti.
