A simple gravy dish that can be paired with pav, rotis or even rice, Matarchi Usal is a Maharashtrian dish that celebrates the flavours of seasonal green peas. Here is the recipe for you to try out.

2 cups fresh green peas 1 potato, chopped 1 onion, chopped 1 tomato, chopped 1 tsp ginger-garlic paste ½ tsp mustard seeds ¼ tsp asafoetida 1 sprig curry leaves ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala Salt, to taste 2 tbsp oil 1 cup water Coriander leaves, for garnish

Heat oil in a wok, then add mustard seeds, curry leaves, asafoetida and let them splutter.
Add onions, tomatoes and ginger garlic paste and saute everything until the onions turn translucent.
Now add the potatoes and peas, the powdered spices, salt and mix well. Cook for 10-12 minutes.

Add the water and cook the Matarchi Usal until the peas are cooked and the gravy is ready.
Adjust the salt, top with coriander leaves and serve the Matarchi Usal while hot.
