Always make sure that you should cut paneer in blocks in order to store them for long.
Cover the paneer with a wet muslin cloth to keep the moisture intact. This will keep paneer fresh for a few hours. Re-wet the muslin every six hours if wish to use it within one day.
If you wish to store paneer for longer periods, then take a bowl, put paneer blocks, and pour water. This way the paneer will remain fresh for a week.
If you have packaged paneer, then make sure you keep the paneer in the freezer by wrapping the pack in a vacuum zip bag.
You can also fry paneer and then refrigerate it for a day in an airtight container. This will keep it from developing a sour taste.
If your refrigerated paneer feels rubbery, soak the paneer cubes in lukewarm water for 15 minutes to restore the softness.
