Also known as Papdi No Lot, Gujarati Khichu is an easy-to-make rice flour dish that can make for a light meal during monsoon. Try out this recipe and indulge in the flavours of Gujarat!

½ cup rice flour 2 cups water ½ tsp cumin seeds ½ tsp carom seeds 2 green chillies, finely chopped ½ tsp ginger, finely chopped 1 tsp khichu masala Salt, to taste 2 tsp peanut oil 1 tbsp coriander leaves, chopped

Heat the water in a large pan with cumin seeds, carom seeds, green chillies, salt and ginger.

Once the water heats up, add the rice flour gradually while stirring constantly to avoid lumps.

Cook the rice flour and water on a very low heat until the rice is cooked and forms a sticky dough.

Once the rice flour starts separating from the sides of the pan, add the coriander leaves and mix well.

Transfer the Khichu into a bowl, top with Khichu masala and peanut oil and serve hot.
