Gujarati kadhi is a sweet and tangy curd-based curry that is relished all over the country. It can be savoured with rice or flatbreads and is quite easy to whip up at home. Let’s explore a simple Gujarati kadhi recipe.

2 cups curd 5 tablespoons gram flour ½ tablespoon cumin seeds ½ tablespoon mustard seeds 2 tablespoons of ghee 5 curry leaves 2 pinches of asafoetida Salt 1 tablespoon ginger-green chilli paste 2 tablespoons of sugar 2 tablespoons finely chopped coriander (for garnish)

Blend the curd and gram flour thoroughly; continue whisking till the mixture is completely smooth and free of lumps. Add 3 cups of water to the mixture, combine it well, and set aside.

Heat the ghee in a vessel, and add cumin seeds and mustard seeds. Once the mixture starts crackling, introduce asafoetida and boil the concoction for a few seconds.

Add the curd-gram flour mixture, curry leaves, ginger-green chilli paste, salt, and sugar to the oil mixture. Mix the concoction thoroughly and bring to a boil for two minutes.

Lower the flame and let the kadhi cook gently for about 10 minutes; continue stirring it from time to time.
