Chicken curry is a flavourful dish made with tender chicken simmered in a rich, spiced gravy. Its blend of aromatic spices, onions, tomatoes, and herbs creates a comforting and satisfying meal. Perfect with rice or bread, it’s a favourite in many cuisines worldwide.
500 gms chicken (bone-in or boneless) 2 onions 2 tomatoes 1 tbsp ginger-garlic paste 2-3 green chillies 2 tbsp cooking oil or ghee 1 tsp cumin seeds 1-2 bay leaves
1 tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder 1 tsp garam masala 1/2 tsp cumin powder Salt to taste 1 cup water Fresh coriander leaves
Heat oil or ghee in a deep pan. Add cumin seeds and bay leaves; let them sizzle. Add onions and sauté until golden brown.
Stir in ginger-garlic paste and green chillies. Cook for 2 minutes until the raw aroma disappears. Add the pureed tomatoes and cook until the oil separates.
Mix in turmeric, red chili powder, coriander powder, and cumin powder. Cook for 1-2 minutes.
Add the chicken pieces, stirring well to coat them in the masala. Cook for 5-7 minutes until the chicken is lightly browned.
Add water, cover, and let it simmer for 20-25 minutes, stirring occasionally, until the chicken is tender and the gravy thickens. Sprinkle garam masala, adjust salt, and mix well.
