Sikkimese Aloo Fing Recipe: Spicy Rice Noodles With Potatoes

A quick and easy to make delicacy that uses minimal ingredients, the aloo fing is a breakfast or snack delicacy from the North Eastern state. Add sliced mushrooms or some chicken to the recipe if you wish to relish this for a delicious meal.

INGREDIENTS

½ packet rice noodles 6-7 small potatoes 1 onion, sliced 1 tomato, diced 2 green chillies, chopped 1 teaspoon mustard seeds 1 teaspoon red chilli powder 1 tablespoon vegetable oil Salt, to taste

STEP 1

Soak the rice noodles in boiling water for 10 minutes and drain to set aside.

STEP 2

Boil the potatoes until softened and peel them to cut into halves.

STEP 3

Heat the oil in a pan and temper the mustard seeds with green chillies.

STEP 4

Sauté the onions until softened before adding the tomatoes and seasoning lightly with salt.

STEP 5

Cover the pan and cook until the tomatoes are mushy, before adding the red chilli powder and potatoes.

STEP 6

Mix well to combine and tip in the rice noodles to toss thoroughly.

Adjust seasoning if needed and take off the heat. Serve hot garnished with spring onions.
