Amchur powder, which is made from dried green mangoes, is a great way to give meals a tangy touch. It is particularly popular in Indian cuisine due to its own unique flavour.
Peel and wash the green mangoes, taking out any spots that remain. Evenly and finely slice the mangoes.
Put the slices on a tray and dry them in the sun for a few days, until they are completely dry. Use a mixer or spice grinder to turn the dried mango slices into a fine powder.
Sieve the powder to get rid of any big chunks and make sure the consistency is smooth.
The amchur powder should be kept in a cool, dry place out of direct sunlight in a container that won't let air in.
