Enjoy the flavors of winter with the Punjabi speciality – Shalgam ka Bharta. It's a curry made of mashed turnip and spices. It's often served with roti as a side. Turnip is a very healthy root vegetable fill of nutrients. Its taste blends but it easily soaks up all the flavors it is cooked with and its leaves are also edible like the bulb. Turnip is rich in calcium, potassium, sodium and magnesium,vitamin C. Anybody can consume turnip as its very low in calories. Here's the recipe for Shalgam Ka Bharta.

Turnips - 4 (300 gms ) Tomatoes - 2 (200 gms) Green chilies - 2 Green peas - 1/2 cup Green coriander - 2 to 3 tbsp (finely chopped ) Oil - 2 to 3 tbsp Asafoetida - 1/2 pinch Cumin seeds - 1/2 tsp Ginger paste - 1 tsp Lemon - 1/2 Turmeric powder - 1/4 tsp Coriander powder - 1/4 tsp Red chili powder - 1/2 tsp Garam masala - 1/4 tsp Sugar - 1 tsp Salt - 1 tsp or to taste

Heat a cooker and add 2 tsp oil in it. When hot, reduce the flame, and half cumin seeds, half asafoetida, ginger paste, turmeric powder, coriander powder. Roast and add the washed and chopped turnip to it, red chili powder,salt and water. Mix and cook the turnip for a single whistle.

Add oil to a pan and let it heat.Then add cumin seeds, turmeric powder, coriander powder, ginger paste and slightly roast the spices. Also add tomato green chili paste. Keep the flame on medium. Add red chili powder to the masala. Stir and roast well till oil separates. Stir and roast at regular intervals.

Add 1/2 cup green peas to masala. Cover and cook it on medium flame for 3 minutes. Check if tender. Add 1 tsp sugar (optional). Add salt. Boil the cooked turnip for 5 mins and mash it.

Mix it with the masala. Add 1/4 tsp garam masala to it. Add a little green coriander. Mix all ingredients well. Cover and cook it for 2 to 3 minutes. The Shalgam bharta is ready, add 1/2 tsp lemon juice to it. Mix it and serve hot.
