A deliciously textured Colocasia fry with dry spices, this dry preparation of arbi is a divine accompaniment to dal-chawal or dahi-chawal.
250 grams arbi 2 cups water ¼ cup vegetable oil 2 tablespoons all-purpose flour 2 teaspoons red chilli powder 1 teaspoon turmeric powder 1 pinch asafoetida ¼ teaspoon garam masala Salt, to taste
Wash the arbi thoroughly and add it to a pressure cooker, along with the water.
Pressure cook for 2-3 whistles, for 10 minutes on a medium flame.
Cool it slightly before peeling and slicing into thick discs.
Bring the oil to heat in a large pan, while you sprinkle the flour over the arbi slices.
Add the asafoetida, turmeric powder and chilli powder to the oil, to let the spices bloom.
Season with salt and continue to cook the arbi slices on a medium flame until they begin to crisp on the outside and brown slightly.
Cook for 10 minutes and add the garam masala just before you turn off the flame. Serve hot.
