Meant to be cooling for the body during the summers, chewy pearls of barley mixed with ripe, sweet mangoes and a spicy dressing is the ideal bowl for your summer lunch.
1 cup cooked barley ¼ cup cooked chauli/rajma 1 large mango, cubed 1 chopped jalapeno 1 teaspoon chilli flakes 1 garlic clove, minced ½ teaspoon cumin powder 1 tablespoon olive oil Juice of ½ a lemon Salt and pepper, to taste
Combine the barley, mango and beans in a bowl.
In a separate bowl, whisk together the olive oil, lemon juice, chilli flakes, salt and pepper.
Add the minced garlic and jalapeno and pour over the barley mixture.
Toss to combine and serve at room temperature or cold.
