Embrace the monsoon season with the delectable Vegan Tofu Palak. Creamy spinach curry with tofu cubes, seasoned to perfection.
1 block of firm tofu, cubed 2 bunches of fresh spinach 1 onion, finely chopped 3-4 garlic cloves, minced 1-inch piece of ginger, grated 2-3 green chilies, chopped 1 tbsp vegetable oil 1 tsp cumin seeds 1/2 tsp ground turmeric 1 tsp ground coriander 1 tsp ground cumin 1/2 tsp garam masala 1/4 tsp red chili powder Salt to taste 1 cup coconut milk Water as needed Lemon juice (from half a lemon)
In a pan, heat the vegetable oil . Add the cumin seeds, chopped onions, garlic and ginger. Saute well.
Stir in the chopped green chilies. Add ground turmeric, coriander, cumin, garam masala, and red chili powder Mix well.
Now Add the chopped spinach to the pan and cook until it becomes tender. let it cool slightly.
Once cooled, blend the spinach mixture into a smooth puree. Now add the purée in the pan with cubed tofu.
Pour in the coconut milk to the curry. Mix well. Season with salt and lemon for a tangy twist.
