Made with buckwheat flour, these puris are very popular during Sawan month. Here is an easy recipe to make kuttu ki puri at home.
240 g buckwheat flour 125 g boiled potatoes (peeled and mashed smooth) 1 tsp rock salt Water to knead Ghee to deep fry Dry flour (for dusting)
Mix atta, potatoes and salt together and knead into stiff dough, with the water. Cover and leave to rest for 30 minutes.
Break the dough into 10-12 pieces, and shape each into smooth balls. Take a ball and roll into a thin round. Repeat the same with remaining dough.
Heat ghee in a frying pan and fry the puris until it turns a little darker on both sides. Drain and place on an absorbent paper and serve with vrat wale aloo.
