Savoury And Healthy Bajra Crepes For Breakfast This Winter

Bajra – India’s winter superfood, is packed with nutrients that are good for hair, joints and loaded with B vitamins. Make these delicious crepes and play around with your preferred savoury fillings for an amazing seasonal breakfast.

INGREDIENTS

½ cup bajra flour ½ cup wheat flour ½ cup warm milk ½ cup water 2 tablespoons melted butter 2 eggs ¼ cup sauteed spinach ¼ cup sauteed mushrooms 3 tablespoons grated cheese Salt and pepper, to taste

STEP 1

Combine the milk, water and butter in a bowl, before adding the flours and mixing gently.

STEP 2

Crack in an egg and season the batter with salt and pepper.

Pour the batter on a warm pan and swivel it around, so it reaches the edges of the pan.

Cook for a couple of minutes before adding some spinach and mushrooms in the centre, with provisions to crack an egg in the middle.

Crack the egg and season with salt and pepper, before placing a lid on top to let the whites set.
