This nutritious and satisfying Lobia Curry is protein-rich black-eyed peas, simmered in a fragrant blend of spices, creating a flavorful and wholesome curry.
1 cup dried lobia 1 tbsp oil 1 onion 2 garlic cloves 1 inch-piece ginger 1 green chili 2 chopped tomatoes 1 tsp cumin powder 1 tsp coriander powder 1/2 tsp turmeric powder 1/2 tsp red chili powder 1 tsp garam masala Salt to taste Fresh coriander leaves
In a cooker add the soaked and drained lobia with water. Pressure cook for about 8-10 minutes Drain and set aside.
Now Heat oil in a large pan. Add chopped onions, minced garlic, grated ginger, and green chili. Saute well.
Add the chopped tomatoes and cook. Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, and salt.
Add the cooked lobia to the pan and mix it with the spice mixture. Sprinkle garam masala and give it a final stir.
Garnish with fresh coriander leaves. Serve hot with steamed rice or roti enjoy!
