Elevate your pasta game with this delicious spinach pesto mushroom pasta recipe. Packed with nutritious ingredients and bursting with flavors, this dish is a perfect balance of health and indulgence.
225g pasta 2 cups fresh spinach leaves 1 cup fresh basil leaves 1/2 cup grated Parmesan cheese 1/3 cup pine nuts or walnuts 3 cloves garlic 1/4 cup extra virgin olive oil Salt and pepper to taste 225g sliced mushroom
Cook the pasta according to the package instructions. Drain and set aside.
Now blend the spinach, basil, Parmesan cheese, pine nuts or walnuts, and minced garlic. Drizzle olive oil.
Continue processing until the mixture forms a smooth and creamy pesto. Season with salt and pepper to taste.
In a heat olive oil Add the sliced mushrooms and saute . Season with salt and pepper.
Add the cooked pasta to the pan and toss with the mushrooms. Add the spinach pesto and mix well.
Cool for about few minutes. Garnish with cherry tomatoes, if desired. Serve and enjoy!
