Monsoon calls for fried pakoras, and one variety that you must savour this year is Rajasthani mirchi pakora. Large green chillies, with a medium level of spiciness, are sliced, stuffed, dipped in a spiced batter, and deep-fried in oil.

Ingredients

1 boiled potato 6 sliced green chillies 1 cup besan ½ tsp chilli powder ½ tsp chaat masala ½ tsp garam masala 1 chopped green chilli ¼ tsp baking soda 1 chopped onion Salt to taste

Step 1

First, wash green chillies, wipe them with paper towels, slice them at the centre, and keep them aside.

Step 2

In a bowl, prepare a mixture of mashed potato, onion, and spices.

Step 3

Stuff the green chillies with potato mixture and dunk them in the batter of gram flour.

Step 4

Make sure the batter is thick so that it coats green chillies nicely.

Step 5

Deep-fry pakoras and enjoy with a serving of green chutney and tea on the side.
