Experience the fusion of Korean cuisine in a vegetarian twist. This easy-to-make veg fried rice features vibrant vegetables and a burst of Korean flavours for a satisfying meal.
2 cups cooked rice 1 tbsp vegetable oil 1 onion, diced 2 cloves garlic, minced 1 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.), diced 2 tbsp soy sauce 1 tbsp gochujang (Korean red pepper paste) 1 tbsp sesame oil 2 green onions, chopped Salt and pepper to taste
In a pan heat oil. Add diced onions and minced garlic to the pan and sauté.
Add the mixed vegetables to the pan and stir-fry. Now add the cooked rice.
Mix well. In a bowl, whisk together soy sauce and gochujang until well combined.
Now Pour the sauce over the rice, Drizzle sesame oil over the fried rice and stir-fry.
Remove from heat and garnish with chopped green onions. Serve hot!
