Sattu Kulcha is a comforting winter feast made with sattu filling with an addition of grated vegetables. Each vegetable can create a different variation of sattu kulcha. Their crunchy crust and soft core make it a delightful and wholesome meal and it's best paired with achaar and mint chutney.

1 cup sattu flour (roasted gram flour) 1 onion, finely chopped 2-3 chopped chillies 1/2 inch ginger, grated 2 tbsp chopped coriander 1 tsp cumin powder, 1 tsp red chilli powder 1 tsp garam masala Salt to taste Juice of 1 lemon 2-3 tbsp oil 2 cups flour, 1/2 tsp baking powder 1/4 tsp baking soda 1/4 cup yoghourt 2 tsp oil or melted ghee Water as needed

In a bowl, mix 1 cup of sattu flour, chopped onions, green chillies, grated ginger, chopped coriander leaves, ground cumin, red chilli powder, garam masala powder, salt, lemon juice and mustard oil.

Combine all ingredients well. Alternate seasonings and lemon juice as desired. Set the mixture aside.

In a large mixing bowl, combine 2 cups wheat flour, baking powder, baking soda and salt.

Add the yoghurt and oil/butter to the flour mixture. Mix well together. Slowly add water to form a soft, smooth dough.

Knead for 5-7 minutes. Cover and let rest for 15-20 minutes.

Divide the dough into balls. Flatten the dough ball, place a tablespoon of sattu filling in the middle, seal the edges and roll into kulchas.

Heat a frying pan or nonstick skillet over medium heat. Place the rolled kulcha in a warm place and cook for a minute then flip. Apply the butter gently. Repeat until you have used the dough.
