Meethi Seviyan, a delightful and easy-to-make Indian dessert, is perfect for festive occasions or a simple sweet treat. This vermicelli-based dish is flavoured with sugar, ghee, and aromatic cardamom for a rich, indulgent taste.
In a pan, heat 1-2 tablespoons of ghee. Add 1 cup of thin vermicelli and roast on a medium flame until golden brown, stirring continuously to avoid burning.
In a separate pan, heat 1 cup of water and add ½ cup of sugar. Stir until the sugar dissolves completely. Add 2-3 crushed cardamom pods for extra flavour.
Pour the sugar syrup over the roasted vermicelli. Simmer the mixture on low heat, stirring occasionally, until the vermicelli absorbs the syrup.
Garnish with slivered almonds and raisins. Serve warm or chilled.
