If you want an interesting pick to savour in the morning, your search should end at sandwich dhokla. It is an ultimate blend of Continental and Indian cooking concepts. Below is the recipe to add a modern touch to Gujarati staple.
For Sandwich Dhokla 1.5 cups of water 1.5 cups of small-grain rice A pinch of hing ½ cup of urad dal, soaked poha ¼ tsp baking soda ½ tsp methi dana Green chutney 1 tbsp sugar 2 tbsp oil
For Green Chutney 1-inch ginger 1 cup of coriander leaves Water as needed 1 tbsp peanut, sugar 1 tsp lemon juice ¼ tsp cumin seeds Salt to taste For Tempering 1 tsp sesame, mustard seeds 2 tbsp oil 2 chopped green chillies 7-8 curry leaves A pinch of asafoetida
Soak urad dal, rice, and methi dana. Wash poha. Grind these ingredients into a ribbon-like consistency.
Add salt to taste, water, and hing. Keep the batter aside for fermentation for at least 8 hours. Keep the green chutney ready.
Adjust consistency and add baking soda before pouring it into the greased mould. Let it steam.
Add a tablespoon or two chutney to the batter and spread it on the first layer. Steam it for 5 minutes on a high flame.
Add the final layer of the batter over the chutney layers and steam it again for 15 minutes on a medium flame. Demould and serve with the tempering.
