Sandesh is a popular Bengali sweet made from fresh paneer (chhena) and sugar. Its smooth, melt-in-the-mouth texture and subtle sweetness make it a popular treat during festivals and special occasions.
500 grams fresh paneer (chhena) 1/2 cup powdered sugar 1/4 tsp cardamom powder Chopped pistachios or almonds
If using fresh paneer, crumble it well. If making chhena from milk, boil the milk and curdle it with lemon juice or vinegar. Drain the whey and collect the chhena, pressing out excess water.
Take the crumbled paneer and knead it on a clean surface or a wide plate until it becomes smooth and free from lumps. This should take about 7-10 minutes.
Add powdered sugar and cardamom powder to the kneaded paneer. Continue kneading until the sugar is fully incorporated.
Heat a non-stick pan on low flame and add the paneer mixture. Stir constantly and cook for about 5-7 minutes.
Remove from heat, let the mixture cool slightly, and then shape it into small round balls or flat discs. You can also use moulds for shaping.
Garnish with chopped pistachios or almonds. Serve chilled or at room temperature.
