Kerala-style ghee rice is a delicious recipe to indulge in summer. It boasts a rich taste and texture because of clarified butter and dry fruits, but it is lightweight on the stomach. This dish is perfect for summer when you don’t want to eat anything heavy.
12-15 cashews 1.5 cups kaima rice 1 cup sliced onions 1-inch cinnamon 1 tej patta 3 cloves, cardamom 3 cups water Salt to taste 4 tbsp ghee 1 tbsp raisin 2 tbsp coriander leaves
Rinse and soak rice for 30 minutes.
Heat ghee in a pan and saute onions and whole spices.
In another pan, fry cashews in ghee until brown. Saute raisins in it too.
When onions are translucent, add dry fruits, water, and rice.
Cover the pan with a lid and let the ingredients cook.
When rice is cooked, gently fluff the grains, and serve.
