Sabudana is popularly used to prepare khichdi, kheer, and vadas. However, it is a binding ingredient for preparing parathas as well. The nutritious delights are perfect for people fasting during Navratri.
1 cup boiled potatoes ½ cup sabudana 3 tbsp roasted peanuts 1.5 cups water 1 tsp cumin seed powder 2 butter paper Rock salt to taste Oil for greasing Ghee for shallow-frying 1 chopped green chilli
Wash sabudana and soak it in water for at least four hours. Grind 3 tablespoons of dry tapioca pearls into a fine powder.
Mix soaked sabudana with mashed potatoes, cumin powder, chopped green chilli, sabudana powder, and crushed peanuts.
Combine all the ingredients into a thick dough-like consistency mixture.
Grease your palms with oil and use your hands to shape a small amount of this mixture into a paratha on butter paper.
Carefully place the paratha on a hot skillet greased with ghee or oil.
Once both sides are roasted and slightly crispy, serve sabudana paratha with green chutney.
