This popular variation features rum-soaked raisins in a creamy vanilla ice cream. It is a unique flavour and something every adult should try during the summer months. Not only that, but it comes together fairly quickly.
1/2 cup raisins 1/2 cup dark rum 2 cups heavy cream 1 cup whole milk 3/4 cup sugar 5 egg yolks 1 tsp vanilla extract
Soak raisins in rum overnight.
Heat milk, 1 cup of cream, and sugar until hot. Whisk egg yolks, temper with hot milk, then combine back into the saucepan.
Cook until thickened, then stir in the remaining cream and vanilla. Chill. Strain raisins and reserve rum. Add rum to chilled custard. Churn in the ice cream maker.
Add raisins in the last few minutes of churning. Freeze until firm and serve.
