Rugda mushroom is a monsoon gem from Jharkhand that has got incredible health benefits along with taste. Here is an easy recipe to make rugda mushroom curry at home:
500 g rugda mushroom (cleaned and cut into halves), 1/4 cup oil, 1/2 cup sliced onions, 1/2 cup chopped tomatoes, 1 tbsp ginger-garlic paste, salt as required, 1/2 tsp haldi powder, 1/2 tsp red chilli powder, 1/2 tsp dhaniya powder, 1/2 tsp garam masala
Slightly sauté rugda in a pan with a tbsp of oil. Remove rugda and in the same pan heat the remaining oil. Add jeera, onion, and cook till onions are translucent.
Add ginger-garlic paste and cook for 2 minutes. Now add haldi, chilli powder, dhania, and a little water. Add tomatoes and salt and cook till mushy.
Add the rugda and mix everything together. Then add water and let it cook for 5 minutes. After that add garam masala, coriander, and chillies. Stir and cover for 2 mins. Serve.
