Make this healthy, creamy and smoky hummus with sweet roasted onions when hunger pangs strike in the middle of the day. Pair it with cucumber sticks or lavash for the full flavour experience.
1 cup cooked chickpeas 2 medium onions 3 cloves garlic Juice of 1 lemon 4-5 ice cubes ½ cup tahini paste 2 tablespoons olive oil Salt, to taste Water, as needed
Place the whole onions with their peel over a flame and char them till they turn black on all sides.
Let them cool for a bit before peeling off the blackened layers and cutting off the core.
Add the peeled onions to a blender jar along with the remaining ingredients and grind to a smooth paste.
If the mixture is too thick, add a little bit of water to dilute it slightly.
Drizzle some olive oil on top and serve with cucumber sticks, pita bread or lavash.
